Sweet Potato Chia Pudding

Sweet Potato Chia Pudding

Vegan, Paleo, grain-free, egg-free breakfast alternative. Also hearty, filling and delicious.

Ingredients

1 small organic sweet potato or 0.5 medium sweet potato
0.5 banana
2 tbs chia seeds
1C Coconut or Almond Milk
2 tbs roasted almond butter
1 tsp maple syrup*
0.5 tsp vanilla (I like a bit more)
0.5 tsp cinnamon or to taste (I like a bit more)

Toppings

Fresh or frozen berries
Nuts or seeds
Coconut chips or shredded coconut
Goji berries, raisins, or dates

*or add more dried fruit instead, such as dried dates, goji berries or raisins

Instructions

1. Combine milk and chia seeds in a jar and put in the fridge overnight, for next morning. Alternatively, do this first thing in the morning for about 30-45 minutes. I don’t eat breakfast right away so I do this first thing in the morning before kids get up. Chia seeds will expand and will turn into a “pudding” like consistency.
2. Wash and steam sweet potato until fully cooked. I cut it in half and steam for about 10-15 mins.
3. Once the sweet potato is cooked, discard the skin and mash it together with banana.
4. Add sweet potato and banana into your chia “pudding” and mix well.
5. Add the rest of the ingredients and toppings of choice.
