COVID-19 Survival Breakfast

When you run out of eggs, milk and other major household staples and the grocery stores are empty, we can still hold ourselves at breakfast for a few months with: nuts, seeds, oats and dry fruit. They’ve got a long shelf life so stock up enough for a month or two.

NUTS: these are amazing because you can just eat them as is or you can make the following things out of nuts:
snacks
-nut butter
-salad dressing

-vegan feta (see recipe here:https://mamaschronicles.com/vegan-feta)
energy balls (blend nuts and dates together until turned into a dough. Make energy balls)
-dessert crust (blend nuts with dates and some oats. Tons of recipes online)

CHIA SEEDS OR FLAX SEEDS: these are amazing because you can eat them as is (with cereal, pasta, salad etc) or you can make puddings out of them

DRY FRUIT: these are amazing because they last a long time. If you are low on fruit, re-hydrate your dry fruit and enjoy.
To rehydrate your dry fruit, soak it in water for a few hours. This way, instead of eating 5 dry apricots, you will only need one or two.

Recipe

The above recipe is a basic Chia Oat Pudding made with home-made almond milk*.

Instructions

Take 2 tbs of chia seeds or grounded flax seeds and soak in your home made almond milk* for at least 30-45 minutes. This will thicken and turn into pudding-like consistency. Add a few cooked oats if you have them, seeds/nuts and dry fruit. Voila – You got a nutritious breakfast despite food shortages.
