Almond Banana Breakfast Muffins

Gluten-Free, Kid-friendly, healthy and filling

Ingredients

2C Brown rice flour
0.5C grinded flax seeds
0.5C cornmeal
1.5C Coconut Milk or Almond Milk
5 tbs almond butter
2 eggs
2 bananas
2 tsp baking powder
1 tsp baking soda
2 tbs lemon juice or apple cider vinegar
1 tbs cinnamon
0.5 tsp salt

Instructions

1. Preheat the oven to 350F.
2. In a blender combine all the ingredients
3. Line the muffin trays with parchment muffin liners and pour in the batter until ¾ full.
4. Bake for about 20 minutes. The muffins are ready when the toothpick comes out dry.
