Green Lentil Patties

I want my children to enjoy beans and legumes. Here is a perfect recipe for that.

Ingredients

2C Cooked Green Lentils
1C Cooked Brown Rice
1/3 C Melted coconut oil
2 Cloves of Garlic
½ Onion (red or yellow)
1/3C coconut flour
2tbs Cumin powder
1tbs Paprika powder
1 tbs Salt (or to taste)
1/2C shredded cheese (Optional, but makes these so yummy!)

Instructions

1. Preheat your oven to 375C.
2. Combine all the ingredients in the food processor except for coconut flour until they start turning into a dough.
3. Remove from the food processor and add to bowl.
4. Slowly add coconut flour and mix well until the mixture turns into a dough that you can make shapes with.
5. Shape these into balls or small burger-like patties.


Optional: If your kids are picky eaters – make these into fun shapes. I like to put this dough into a silicone waffle mold (see picture below) and place in the freezer for about 10 minutes. Once the dough becomes solid, you can take it out of the silicone and follow the same baking instructions below.


6. Bake for 20 mins. Then flip and bake for another 10 minutes.
7. Let cool and enjoy!
