Orange Banana Breakfast Cream
Healthy Breakfast Cream

Breakfast is a perfect time to eat fruits and healthy sweets. Sometimes I just want to eat a (healthy) cake! Well, now I can. I made this delicious cream that is not too rich so that you can have a good amount of it and not worry too much about calories. It goes really well with pancakes and, essentially, you can make a healthy pancake cake for breakfast. See below.

Ingredients

1/2 c. cashews (soaked)
4 tbs. coconut yogurt (or any plain yogurt)
1/4 orange
1/2 banana
1 tsp. orange zest + for garnish
2 tbs. lemon juice
2 tbs. honey or maple syrop
1 tsp. cinnamon
1 tsp. vanilla

Instructions

1. Soak the cashew nuts in water for about 30 minutes.
2. Blend all the ingredients in the blender or food processor until smooth.
3. Enjoy as is, or make a pancake cake:

Pancake Cake

1. Spread cashew butter on a pancake, add sliced bananas, and spread the cream on top.
2. Place another pancake spread with cashew butter, on top of the first pancake.
3. Cover your “cake” with the Breakfast Cream. Top with grated orange zest. Yum!
