Oatmeal Cookies

Gluten-Free, Nut-Free

Ingredients:

  1. 1 Cup Rolled Oats*
  2. 1 banana –
  3. 2tbs grounded Flax seeds
  4. 2tbs melted coconut oil

Sweetener of choice

(choose one or two, or none! Above is a low sugar cookie and is good on its’ own although not quite kid approved!):
-Date Paste (see Date Paste recipe below)
-2tb spoons of raisins or currents
-2 tb spoons maple syrup
-2 tb spoons of honey
-chocolate chips to taste
-2 tb of cacao powder

Optional:
-2 tb of cinnamon
-Seeds
-Nuts (avoid if these are made for school)
-2 tb of cacao powder for a chocolate version

Method:

  1. Mash the banana with a fork.
  2. Fold in Flax Seeds.
  3. Slowly add Oats, mixing everything together thoroughly.
  4. Let sit for 5-10 minutes. Flax seeds will absorb some of the moisture
  5. Preheat the oven to 375C.
  6. Add desired sweetener or other toppings.
  7. Lay parchment paper on the baking tray.
  8. Scoop a handful of the batter, roll into a ball and press into a cookie. Lay the cookie on the baking tray
  9. Bake for 8 minutes.
  10. Let cool down and refrigerate for up to 5 days.
