Healthy Fruity Carrot Cake
This is a healthy, grain-free carrot cake made almost entirely from fruit and nuts. It’s so healthy and delicious – you can eat a big slice and feel good about it too.
I made it for my daughters birthday and it looked like this:
Ingredients
Fruit Pulp:
1/3 c pine apple
3 medium-large carrots
1 apple
Other cake ingredients:
1 c. dates
2 eggs
1/3 c. coconut oil, melted
1/2 c. raisins
1 c. walnuts roughly chopped into peas sizes
1 tbs. cinnamon
1 tbs. vanilla extract
1/2 tbs. allspice
1/4 c. coconut flakes
1/2 c. coconut flour
1 tsp. baking powder
Icing:
3 c. Cashew nuts
3/4 c. fruit juice such as apple, grape or pomegranate. You can also use coconut water instead.
4 tbs. maple syrup
3 tsp. pure vanilla
2 tbs. lemon juice or apple cider vinegar
3 tsp. melted coconut oil
Instructions
Make the pulp:
1. If you have a juicer, use the juicer to make the pulp. Otherwise, combine the Fruit Pulp Ingredients in a blender and blend well into a puree.
2. Strain the juice out of the fruit puree by using a fine mesh strainer. You should get about 1 cup of juice from this and 1.5 cups of pulp (although it won’t be as dry as if you were to use a juicer, but that’s ok)…
…It took me about 8 minute to strain this manually. Not too bad for not having to set up and clean the juice machine. 😉
Make the cake:
3. Combine the fruit pulp and the rest of the ingredients except coconut flour, walnuts and coconut flakes in a blender and blend well.
4. Transfer into a bowl and add coconut flakes, walnuts and coconut flour. 5. Mix well with a spoon and let sit for 5 minutes.
6. Line a baking tray with parchment paper (I used 9 inch round baking tray) and transfer into the baking tray. Pat it into a nice cake shape.
7. Bake for about 35 – 40 minutes.
8. The cake is ready when toothpick comes out dry.
9. Run a knife through the tray edges and the cake should come out nicely.
Make the Icing:
1. Combine all the icing ingredients in a blender or food processor until smooth.
2. Do a taste check. Yum!
Putting it all together:
1. Once the cake is ready, take it out of the baking tray and let it cool down completely.
2. Spread the icing on top of the cake and all around it.
3. Sprinkle with grated carrot, toasted cashew nuts and toasted pumpkin seeds for color, or anything else that you desire.
