Banana Oat Pancakes
Vegan, gluten-free and healthy, these Banana Oat Pancakes are delicious. My whole family, including my kids love them. They are easy and quick to make and can be frozen for those hectic mornings.
I also love making a healthy breakfast “cake” out of them. See instructions below.
Ingredients
2 c. gluten-free rolled oats
1 banana
1.5 c. almond or coconut milk
1/3 c. cashews (optional)
2 tbs. grinded chia seeds
1 tbs. cinnamon
1 tsp. vanilla extract
1 tsp. baking powder
0.5 tsp. salt
2 tbs. maple syrup (optional)
Instructions
1. Blend all the ingredients in a blender.
2. In a non-stick skillet brush over coconut or vegetable oil and add batter into pancake shape.
3. Cook for about 2-3 minutes. Flip the pancake and cook for anther 2 minutes or until ready.
I like these with almond butter, banana, yogurt and berries or pomegranate.
The pancake “Cake”
You can also make a pancake “cake” as follows:
1. Spread almond butter on one pancake and top with thinly sliced bananas.
2. Add a dash of maple syrup if you have sweet tooth. I personally skip this step.
3. Spread almond butter on a second pancake and place on top of the first pancake.
4. Mix coconut (or dairy if you prefer) yogurt with a bit of cinnamon and spread on top of the second pancake.
5. Add pomegranate seeds or mixed berries.
