All Natural Sprinkles
I always wanted to find or make healthy sprinkles for my daughters’ cakes and desserts. And now I can! These sprinkles are made entirely from fruits and vegetable juices and shredded coconut and honey. Amazing!

Instructions will vary for different colors. But, basically, you will need:

Fruits
Veggies
Spices
Shredded dried coconut
Honey for sweetness if you prefer
Instructions
Using Veggies:
If you have a juicer and are already making juice, then save a few table spoons of juice for the sprinkles as a “dye”.
Otherwise, don’t bother with a juicer and use blender as follows:
1. Chop up a few handful of veggies, such as carrots (see below for colors).
2. Blend in a small blender or food processor. You might want to add a little bit of water to smooth it out.
3. Strain it through a fine mesh (stainless steel) strainer to get the juice. You won’t need a lot. 2 table spoons would be enough for about 1/4 cups of shredded coconut.
4. Place the juice in a small jar and add dried, shredded coconuts. You can also add a 1/4 tea spoon of honey to sweeten the coconut. Let sit for about 30 minutes. The coconuts will turn into the desired juice color.
5. Line baking tray with parchment paper and spread the colored coconuts sparingly.
6. Bake at 250F for about 45 minutes. Make sure to mix and shuffle the coconuts around with a fork after about 20 minutes for better results. The sprinkles are ready when dry.
Using Spices:
Turmeric will give you an colorful yellow, while matcha tea will give you a nice green shade. Other spices also work for different colors.
1. Mix about 1/4 tea spoon of the desired spice (see below for colors and suggestions) with about 2-3 table spoons of water.
2. Your colorful dye is now ready. Now follow above steps from 4-6.
RED
To get a nice red “dye” use beet juice.
PINK
I haven’t tried this but I think you could use dried up pomegranate powder and follow “spices” instructions, or better even, pomegranate juice.
PURPLE
Use red cabbage juice.
YELLOW
Use turmeric spice.
You can also shred lemon if you want to use fresh “sprinkles”. Baking it didn’t work for me, but perhaps dehydrating it, if you have a dehydrator would work.
ORANGE
Use carrot juice.
You can also shred orange peel or carrot for fresh, orange, “sprinkles”.
GREEN
Use Matcha tea or Spirulina powder. You can also use left over green juice if you have any.
BLUE
Add 1/4 baking soda into your cabbage juice and watch it turn from purple to blue. Use fresh, unbaked blue sprinkles. If you bake them, they will turn greenish. So much for chemistry! I haven’t tried yet, but blueberry juice might work too. I will update this part once I try it.
