Sugar-free energy balls

When you want an energy ball but without all the sugar (from dates or otherwise), these come very handy and are delicious! You can have them as a snack or even pop a few for breakfast or lunch.

Ingredients

4 Sun dried tomato halves, rinsed and patted dry (or just under 1/4 cup depending on the size of your sun dried tomatoes)
1c. Rolled oats
3 tbs. Peanut butter
1/4 c. Dry roasted finely chopped peanuts
1 tsp. Salt
1 tsp. Paprika
4 tbs. Plant based, unsweetened milk such as almond, cashew or coconut.

Instructions

1. Combine all the ingredients in a food processor except peanuts in a blender and blend well.
2. Transfer into a bowl. Add the finely chopped peanuts, reserving a handful to wrap the balls. Mix well with a spoon.
3. Form the dough into balls.
4. Coat the balls with chopped peanuts.
