Skinny Goddess Breakfast Boats

When I’m tired of eating eggs, grains, fruits and nuts for breakfast, I turn to these babies. Delicious, refreshing, nourishing, satisfying. I love having them with a glass of Match-tea milk.

Ingredients

Lettuce Leaves
1 Small sweet potato or half of a large one
Salt
Coconut Oil
Paprika (optional)
Hummus
Alfa-Alfa sprouts
Beets Spread* (recipe coming out soon)
Olives (optional)

Instructions

1. Turn the oven on for 375C. Grate the sweet potato and sprinkle with salt, paprika (optional) and massage with a bit of coconut oil.
2. Bake for about 12 minutes or until cooked. Take out of the oven and let cool.

Sweet Potato Boats
Spread the hummus on the lettuce leaves. Sprinkle with sweet potatoes and alfa-alfa sprouts.

Beet Boats
Spread the hummus on the lettuce leaves. Add olives if desired. Spread the Beets Spread on top and sprinkle with alfa-alfa sprouts.
