Quinoa Falafel bites
Gluten-Free, Vegan, Kid-Friendly
Perfect lunch meal for children. It got the protein and carbs all in one. And it’s clean.

Total Time: 45 mins
Ingredients
3C Cooked chickpeas
1.5C Quinoa
1/2 Onion
4 tbs Melted coconut oil
3 tbs Apple cider vinegar
3 tbs Grinded flax seeds
3 Cloves garlic (small) or 2 large cloves
3 tbs Paprika powder
2 tbs Dried Parsley or chopped fresh parsley
1 tsp Salt
Instructions
1. Preheat the oven at 375F
2. Combine all the ingredients except quinoa in a food processor and blend well.
3. Transfer into a bowl and add quinoa. Mix well with a spoon
4. Take a handful of the dough and roll into ball. Then gently press down on the ball into a patty. If your dough is too mushy, add a table spoon or two of coconut flour. Let it sit for a few minutes to thicken.
5. Bake for 15 minutes. Then flip the falafels and bake for anther 15 minutes.
6. Take out of the oven and let cool. Enjoy!
