Paleo Pizza
I love making healthy versions of unhealthy foods. This grain-less, cheese-less “pizza” is very satisfying and filling but does require a bit of a time investment. It takes me about 30 – 40 minutes.
The following proportions are meant for two small-medium pizzas.
Ingredients
Crust:
3C cauliflower rice
3 eggs
1/4 C coconut flour
3 tsp dried oregano
1tsp garlic
1/2 tsp salt
1/2 tsp black pepper
Sauce:
3C of diced squash cut into cubes.
3 tbs tahini
4tbs apple sider vinegar or lemon juice
1 small garlic clove or 1 tsp garlic powder
3tbs olive oil
1tbs paprika
1/2tbs salt or to taste
Toppings
Sautéed mushrooms*
Sauerkraut
Sunflower seeds (toasted or sprouted)
Green onion

Instructions
Make the crust:
1. Preheat the oven to 350F.
2. In a bowl combine all the crust ingredients. I use riced cauliflower such as in below picture. Otherwise, you would need to take a whole cauliflower, cut into chunks and run it through the food processor until it starts looking like rice.
3. Spread the crust dough onto a baking tray and bake for about 15 mins. Take out of the oven, flip upside down and bake for another 5 minutes.

Make the Sauce:
1. At the same time, bake the squash cubes at 350F for about 15-20 mins until they are soft and ready to eat. I like to coat and massage the squash with coconut oil, salt and paprika prior to baking.
2. Wait for the squash to cool down.
3. In a food processor, mix all the sauce ingredients together until smooth.
Putting it together:
Spread the sauce over the pizza crust. Add desired toppings and enjoy!
