Fruit And Seed Cookies

These are awesome for school lunches and snacks overall and they are loaded with nutrients.

Ingredients

1 Ripe banana
10 Dates
4 tbs Grinded flax seeds
1/2C Blueberries
1/2C Pumpkin seeds + 3 tbs divided
2 tbs Hemp seeds
3 tbs Coconut flour

Instructions

1. In a food processor, blend all the ingredients together except the coconut flour and the 3tbs of pumpkin seeds. Blend until it turns into a dough.
2. Transfer into a bowl and add coconut flour and 3tbs pumpkin seeds. Mix well with a spoon.
3. Let sit for 10 minutes. The dough will thicken.
4. Take a handful of dough and shape into cookies.
5. Bake for 10 minutes. Turn and bake for another 10 minutes
6. Take out of the oven and let cool.

Store in the fridge. These are best consumed fresh within a few days.
