Cottage Cheese Balls


I love these filling and delicious Cottage Cheese Balls for breakfast with yogurt and berries. And while I tend to avoid dairy, this is a nice occasional “treat” for me, to change things up. My children love these balls and it’s also a very good snack for school lunches.

Ingredients
3 ripe bananas
250g., or about 1.5 cups, of firm cottage cheese*
4 tbs. flax seeds
2C. rolled oats
1 tbs. pure vanilla extract
3/4 tsp. salt (if using unsalted cottage cheese; just a pinch otherwise)
1 tsp. cinnamon
2 tbs. coconut flour
2 – 3 tbs. honey or maple sirup (Optional for adults; but not for kids)
*It’s important to use firm cottage cheese for this recipe and not the runny ones. See below photo for an example of firm cottage cheese.

Instructions
1. Turn the oven on at 400F.
2. Mash bananas with a fork until they turn into puree.
3. Add the rest of the ingredients and mix really well.
4. Roll into small balls of about 1 to 1.5 inches in diameter.
5. Bake for about 20-25 minutes.
6. Take out of the oven and enjoy.
You can also freeze these and have them later.
