No-Bake Blueberry Goat Cheese Cake
No-bake blueberry  cheesecake

This is a delicious and super easy to make no-bake cheesecake. It comes together in about 20 minutes and requires no baking whatsoever. I would also call it a cake “with benefits” as the main ingredient is goat cheese which is much better than typical cow’s cream cheese. It’s also mainly sweetened with dates, which are packed with nutrients. Basically, it’s a win-win cake!

No-bake blueberry cheesecake

Ingredients (this is for a 6 inch round cake)

Crust**

1/2 c. rolled oats
1/2 c. dates
1/2 c. pecans
1 tbs. coconut oil
2 tbs. coconut or almond milk
1/2 tsp. cinnamon
A good pinch of salt

**NOTE: if you like thicker crust, double the ingredients.

Cake

300g. unflavoured, plain soft goat cheese (see picture below)
1 c. blueberries
1 c. dates
1/4 c. pecans
3 tbs. maple syrop
5 tbs. coconut flour
2 tbs. coconut oil
1/4 tsp. salt

Instructions

Crust

1. Place the oats in a food processor and blend until they turn into flour.
2. Add the remaining ingredients and blend until roughly smooth. The mixture should now be turned into dough.
3. Transfer the mixture into a backing tray to make the crust. Press evenly until it covers the entire bottom of the baking tray.
4. Set aside.

Cake

1. Combine all the ingredients except coconut flour in a food processor until smooth.
2. Add the coconut flour and keep blending. The mixture should now thicken considerably, although it won’t be like a dough.
3. Transfer the mixture in the baking tray on top of the crust and smooth it out.
4. Place the cake in the fridge for at least 4 hours to set it and to solidify.
5. Once ready, decorate to your liking. On the picture above, I carved out a spiral and placed blueberries there.
