Black Bean Brown Rice Balls
Vegan, Gluten-Free delicious balls that are nutritious and filling. They are approved by the pickiest eaters in my home.
Indulge in these nutritious and filling vegan, gluten-free black bean balls, loved even by the fussiest eaters in my household. This recipe yields around 30 savory balls and is perfect for a large family feast or for convenient freezing to enjoy later. Made with wholesome ingredients like cooked black beans, brown rice, onions, garlic, and a blend of flavorful spices, these delicious balls are bound with coconut flour and coconut oil for a delightful taste and texture. Enjoy the taste and the health benefits in one meal!
Ingredients
4C Cooked black beans
2C Cooked brown rice
1 Onion, chopped up
2 Garlic cloves, chopped up
5 tbs Coconut oil
1/4C Coconut flour
1.5 tsp salt
5 tbs Brine (such as from Sauerkraut) OR water with a dash of salt
2 tbs Dried Cumin
2 tbs Dried Oregano
1 tbs Dried Paprika
1 tbs Chili Powder (optional)
Instructions
1. Preheat the oven to 375F.
2. Combine all the ingredients except the Coconut Flour and Rice in a food processor and blend well.
3. Transfer the mixture into a large bowl and add Rice. Mix well with a spoon. Slowly add the coconut flour and keep mixing well with a spoon until you can start forming the mixture into balls.
4. Take a handful of mixture and shape into balls.
5. Bake at 375F for 15 minutes. Take out of the oven, turn, and bake for another 15 minutes.
Enjoy these with salad, home made sweet potato fries and/or (home made, if possible) ketchup.
